Neill's Flour Recipes
Fat Free Sponge Mix
Fat free sponges are simple to prepare and quick to cook. For a light sponge it is important to include as much air as possible during the preparation process.
Preheat oven to 200oC ( 400oF) Gas mark 6
Grease and line 2 18cm ( 7") cake tins
Method:
Break the eggs into a bowl and add the caster sugar
Whisk the eggs and sugar until they are thick and creamy
Sift the flour into the bowl and carefully fold in using a metal spoon
Divide the mixture between the two tins and turn the tins to allow the mixture to level off without spreading
Bake for 15-20 minutes until golden, set and springy

- 75g ( 3oz ) Caster sugar
