Ingredients

  • 225 g / 8 oz Neill's Golden Fleece Plain flour
  • 175 g / 6 oz butter
  • 35 g / 1½ oz caster sugar
  • pinch of salt

Method

  1. Sieve flour and salt, rub in butter.
  2. Add sugar and knead mixture until it binds together.
  3. Lightly roll or shape into 12mm / ½” thick rounds.
  4. Keep in the round and crimp edges and mark into wedges, or cut biscuits using a shaped cutter.
  5. Place on a baking sheet or oven tin, and bake in a moderate oven 150°C/300°F/Gas Mark 2 for 40-45 minutes.
  6. Cool on a tin.
