Irish Apple and Cinnamon Bread with Baked Bramley Apples

Serves 4-6

A sweeter bread can be so tasty either toasted, buttered on its own or as a basis for many a quick sweeter snack.

This is a great idea for a quick dessert. The flavour of Neill's apple and cinnamon bread, thickly sliced and topped with fruit, honey, yogurt or ice-cream makes a tasty dessert.

Method:

  1. Blend the softened butter or fat through the mix. Add the milk and blend lightly to form a smooth dough. Transfer the dough to a well greased 1 lb loaf tin. Pat down well and brush the top surface with a little milk. Make a cut lengthwise and about half way deep into the dough.
  2. Bake in a pre-heated oven Gas Mark 7 or 220°, cover for a fan assisted oven for approximately 27 minutes until well risen and golden brown.
  3. When baked wrap in a clean dry tea towel and allow to cook slightly then cut into think slices.
  4. Wipe and core the apples
  5. Place on a baking sheet and fill with blackberries and pour over a little honey. bake in a pre-heated oven at 200° or Gas Mark 6 for 15 minutes. Cooking time will vary slightly with the size of the apples. When cooked and softened place on top of the thick slice of the warm apple and cinnamon bread. (I love the bread toasted). Top and serve with yogurt or use cream lightly dusted with a hint of cinnamon powder and icing sugar. Serve warm.

Tip

Other toppings for this bread to serve as a dessert are sliced applies and plums gently poached for 2-3 minutes in a light sugar syrup or peaches and nectarines cit into slices or wedges and sprinkled with a little Demerara sugar and grilled for 2 minutes.

  • 245ml milk
  • 15g/0.5oz softened butter or fat
  • 4-6 apples cored
  • 2dsp honey or maple syrup
  • To serve
  • 25g/1oz icing sugar
  • Hint of cinnamon powder
